Last night we hosted a vegan potluck at our house and it was so fun! We had a great turnout and tons of delicious food. It was a belated Cinco de Mayo theme, and I made black beans and Mexican rice, plus these delicious Mexican hot chocolate cupcakes from
VCTOTW. I topped them with chocolate ganache (also from VCTOTW), powdered sugar, and SoyaToo whipped topping. I was quite irritated when I woke up this morning to find that Matt had taken the last two cupcakes to work. Grrrrr.....


I will definitely make these again - the combination of flavors was very unique and tasty. Next time I make them, I will fill the muffin tins only two thirds full instead of the suggested three quarters, even though it will make them spill over into a second pan (making more than twelve), because this time they got a bit of a weird flattened muffin top effect. A small cosmetic defect in an otherwise heavenly cupcake.
