Soup's On

It's been a while since I've posted any recipes, so here you go! My brother used to work in an awesome local restaurant (which has since closed, sadly) that served this amazing soup...


Fire Roasted Red Bell Pepper Soup


1 quart stewed or diced tomatoes
2 cups vegetable broth
2 large red bell peppers, roasted
1 can (14 oz.) artichoke hearts, grilled
1/2 cup garlic cloves, roasted
1 teaspoon salt
1/2 teaspoon black pepper
1 cup soy creamer
1/2 - 1 bunch fresh chopped basil

Combine first seven ingredients (tomatoes through pepper) in a large stockpot. Bring to a rolling boil, reduce heat, and simmer for 40 minutes. Add soy creamer and basil and simmer for 10 more minutes.

Allow to cool slightly, then puree in a food processor. If soup is too thick, add more broth to achieve desired consistency.
